Thanks for reaching out to us. My guess is that this could be related to the MetaData and Description placeholders. In the Payment option, when Stripe is enabled, if you scroll down to the bottom, there is an option to set the MetaData and Description. You can set it for Appointments, Packages and Events.
These are the placeholders that actually read the information like the customer name, email etc. So, you want to set them here, so they can be transferred to Stripe.
You can find a full list of placeholders that can be used in the Notifications panel, but in your case, placeholder like this should be enough.
