I try to create a table linked to a Google spreadsheet who is shared.
Il receive a message ".... unable to access data".

You did not Publish the Sheet, that is most probably the issue.
You set the Share to 'anyone with link' which is good, but it seems you have not Published the Sheet.
Please publish it, and double check all the steps from this Documentation how to connect a Google Sheet to a Table, and it should work.
If you need to use a Private Sheet, then check out the other method by using the Google API.
