This test was done on 6.7. (we are using the latest version)
Are you able to make a custom field in the backend, but it's not showing on the front end, or you are seeing the issue in the backend?
Issues like this usually occur when there is a conflict either with the theme currently active on your website, or most likely another plugin you have installed. (most probably caching plugin)
Can you please change the theme and see if the issue is resolved? If not, then please deactivate all other plugins except for our plugin, refresh the page where the issue is, and see if it is resolved (it should be). If it is, then start activating other plugins one by one, and after each activation refresh the page to see if the issue reoccurred.

We are having the same issue using Amelia and Mylisting theme. We have to switch to a basic theme, create the field we need and then activate Mylisting. Hope this helps
@Ronnie Kirschner yes but who should resolve the confltc ? Mylisting or Amelia ?
by the way, is it possible to enable a unique custom field enabled by default for all events ?

By default, the custom field will not be applied to all events, since Amelia is not recognizing if you want this to be applied to all events. You would need to apply the custom fields to events/appointments according to your liking.
Regarding the conflict, unfortunatelly, this issue is occurring frequently, the workaround is to exclude the MyListing theme or use a different theme to avoid conflict.
