I would like to create a service and/or category with a service that is ONLY visible on a particular page and only that one can be booked.
In other words, I want to have clients choose a date and time for a call, without payment, and they can ONLY book that particular session/service and Only with me, ONLY on that page.
That category or service should NOT be visible anywhere else so when visitors try to make a booking with my staff on my site they should NOT see that category or service.

The way to display the particular service/category is to use the specific shortcodes. For example,
[ameliastepbooking category=1 employee=1] if you want to show only the services from a category with ID 1 that are assigned to the employee with ID 1,
The main "issue" here is the fact that all settings from the back are visible in all booking forms, meaning that if you assign yourself as an employee to a specific service, all these settings will be visible in all booking forms.
"Without payment" option is not available since the booking form process requires the customer to complete the steps in order for the booking process to be completed. Certainly, you can make the service "Free" but that doesn't mean that I will skip this step.
The workaround would be to maybe create a "dummy employee" that will only be assigned to a specific service and displayed only on that specific page, otherwise, it will be visible as a selection on the "initial" page.

Thanks for the feedback. When an employee is logged in to the employee panel, he needs to navigate to the "My profile" where he can see the settings (depending on the settings you've previosly enabled in the Roles settings)

And what are those settings that need to be set for the employee to be able to do all these things? Where exactly do I have to go and what do I have to click/select so that the employee can set everything in their account, as in your screenshot...??
Somehow, the replies I get are almost never complete and it takes two / three questions to get a complete answer :( And at the rate of one answer/day... what could be solved in one message, takes a whole week :((
My apologies, but your question was related to setting their own work hours in the employee panel, not regarding enabling the settings in the Roles. In order to enable the option for the employees to set their own work hours, you need to enable the option "Configure their schedule" in the Roles settings.

As per my previous message, an employee needs to log in to the employee panel, navigate to the My Profile section, and here he can see all the options available.
I want to offer apologies in front of all team regarding the late replies. Please note that we are a small team, and we have a high number of tickets almost every day. Some issues require troubleshooting and thus it takes more time to solve them, on the other hand, we are responding to the tickets in the order in which they are received and/or responded to.
We recommend checking out our documentation where a lot of this information can be gathered.

It works now. It was not enough to refresh the incognito tab. I actually had to close it and open a new incognito tab and log in to be able to see the changes.
