Thank you for your help so far. I have managed to change some of the labels after following your guidance but there are still labels using the words "Package" and "Service" that I need to change and I cannot find them in the customisation pages.
As you can see from the attached screenshot, when I add a package option to a service, the labels use the words Service and Package, which is what I need to alter.
