I'm not seeing correct times for the booking choice. My time zone in WP is set to New York. I'm in new york time zone too. The work hours are set for 0900 to 1700, but I only see 10a-2p across the calendar.

Hello Lee,
The availability of the service is defined by employees' working hours, so you would need to edit those in order to achieve this.
When you go to Amelia/Employees, and select that employee, go to the Work Hours tab. In there create several working periods. For example:
My employee would work on "Service 1" and "Service 2" from 08:00 - 10:30, on "Second" service from 10:30 - 15:30, and then again on "Service 1" and "Service 2" from 15:30 - 24:00.
You'd be adding these periods by clicking on the blue + sign next to the name of the day, in the top right.

I figured it out. It's Buffer Time. I set Buffer Time to 1 hour, and it's breaking the calendar.
Buffer time should only apply to adjacent appointments, but instead it's blocking empty time slots from appearing.
I had Buffer Time set to 1 hour. If I remove it to 0, then the times appear correctly.
Also, if Buffer time is going to knock out appointment slots by default, why can't I set it to 0.5 hours, or 15 minutes? Your time picker only allows 1, 2, 3 or more HOURS of buffer time.

Buffer time counts in in the length of service. For example, if you work from 09 to 10 and you set the buffer time to 10 minutes your service length is 1 hour and ten minutes and this time can not be shown as available on the calendar. You can set the smaller time interval for buffer time easily. Just go to general settings and set that default time slot step is 5 minutes like this
