1. I want to lock the view for Calendar and Listing pages to use only my required dates. For example I might choose August 31- September 14. Is it possible to do this so I can choose to display only these dates?

When you say Calendar and Listing pages i suppose you mean the Calendar Booking Form and Event Listing Form? There is also a backend calendar, so i just dont want to be mistaken.  Unfortunately, on the booking form, there is no option to lock the view, but feel free to suggest this a a feature on this link - Amelia Features

2.Can I add ACF (Advanced Custom Fields) to my events to display in Calendar & List view. I’m comfortable with php code.

We can recommend using Amelia's custom fields on the events/services. You can find more information regarding Amelia custom fields on this - Amelia Custom Fields. Certainly, it could work with the ACF, but we can't guarantee it.

3. I want to add guest members who will be able to create and edit only their own Events. Can I do this either in WP Amelia or would I need to add a custom role using code with such permissions?

When a customer books an event/service, later he can control an appointment in the Customer Panel. Front-end Customer Panel allows you to offer your customers an easy way to track, reschedule, and/or cancel their appointments and events.
