I'm afraid that we didn't quite get what you want to achieve exactly? Can you explain to us in a little more detail, and send us a couple of screenshots?
You can not find those data there because custom fields are tied to an appointment, not to a customer. Please go to the appointments and click on edit appointment and you should be able to see those data there.

You can use custom fields for events also. When you click on the attendee-edit attendee you will see the custom fields data. Custom fields are tied to events and to appointments not to customers as such. So each time they book they will need to fill in data for custom fields.

-> at the moment only the event "Geburtsvorbereitung Februar 24" has user fields

Hello,
please look at the booking-form-w-uf, where we have 4 user fields (Geburtsdatum, Krankenversicherung, Versicherungsträger, Versicherungsnummer).
I can find none of these user field data in the customer data in the backend.

... which means, it does not work with events?
My screenshot showed the signup for an event, not for an appointment.
We have courses where we need to know a couple of things from the atendees - more than just the four defauklt fields.
Sure we could ask this information after their signup, but that would make it all more complicated ...
Unfortunately user fields don't have names or ids, which woukd make it easy to have an event listener to catch the information.
