I have a question, I tested to put the specific hours for the employee once and another time for the working hours, but it does not work as my client would like.
Schedules are with specific ranges :
Monday : 09:00 - 10:00 Thursday : 09:00-10:00 and 15:30-16:30 Etc.. ==> See screenshot
Only specific work time slots should be displayed in the calendar. But with different setting tests, either I have 0 accessible time slots because in August the agenda is full and it doesn't go directly to the next place. and with this setting below, I am offered other time slots than those included in the company's opening hours.
There is only one employee in this company who opens for care on these specific hours

Judging by your screenshots, you should do the opposite. Work hours you've set for the Global Work Hours (working hours and days off in the settings) you should set them in employee work hours.
For example -
While the "global" work hours in the settings are set to default.
In the booking form, you will see only the specific timeslot as per employee work hours

This screenshot is from the Settings /Working Hours & Days Off. Although, you can make the settings work if you set it here, this is not the place where you are setting the employee work hours.
Employee work hours are defined in the Employee section of the selected Employee. So, you need to go to the Amelia / Employee / Select the employee and then define the employee work hours like I did in my screenshot (or as per your liking)
Also, on your website, i can see that you are using two booking form. Although, both booking forms will work, we recommend using just one.

The problem here is the buffer time and before in the Services section. You did set up everything correctly, but the service time is longer than the employee work hours (because buffer time before and after also counts) thus you are not able to see anything on the booking form.
I've changed the employee work hours to 2h shift and now on the booking form, for that particular date, you can see the availability.
Of course, on the booking form, you will see a time slot like this, because there is a buffer time before and after.
You can change the rest, but keep in mind the before and after buffer time.
