We want to provide an option for our customers to opt out of the Amelia Notification Emails that we send out to them. We couldn't seem to find any email placeholder for it.

There's no way to do this in Amelia.
If you enable notifications, all customers who leave their email addresses will receive the notifications.
You can configure the form through Amelia/Customize, so the email address is not mandatory. Then, you can add a "Text Content" custom field, where you will add a note. For example:
"By adding your email address, you agree to receive automated emails regarding your bookings, appointment updates, reminder, and follow-up emails."
