The option to show service price is turned on by default, but if you want to hide it, you can do that in the Payments section. Regarding the payments, if you turn off all online payments, you will still have on-site payment enabled.
This cant be disabled since there must be at least one way of collecting funds for services enabled by default.

You have two payment options - on-site or via payment providers. On-site payment method is enabled by default and it cant be disabled. It means that you are giving customers an option to pay on-site.
