Depending on what form you are using, you need to select the right options. You can select between Form 1.0 and 2.0. You can find options for both forms in AmeliaWP - Customize.
Here you change colors, labels, order and etc.

I'm trying to understand this a bit more. When you say "field colors" do you mean the fields with dates when you are selecting the dates for booking?

Or do you mean the button where it says "Continue". I can see that the button color is also different.
Also, you sent the link which should lead to the employee panel (judging by the URL), but for some reason, it's leading to the same page as the first link.
Are you also having issues with the employee panel colors?

I use Step-by-Step Booking Form, however, it seems the colours have not inherited correctly.
They are totally different from a booking form:

the process is a bit different if you want to change the colors of the employee/customer panel.
In order to change the general colors of the Customer/Employee Panels as well as the text colour;
at the moment we don't have a separate setup that is only for the Panels;
but if you go to Amelia Customize/ choose Step 1.0 Forms,
and enable "use global colours",
then the same colours you set for any of these "Step 1.0" Booking Forms, will be reflected in the Panels :
Make the changes you need, then "save", clear cache of the site,
then refresh the Employee Panel page, and check the result :

they will release it soon, with new customization options,
