How to set this up? Amelia keeps on offering 10:30, 11:00, 11:30, etc.

Thank you for reaching out to us.
You can use the option Use service duration for booking a time slot in general settings and in your case as far as we can see you need to set 30 minutes buffer time for that service and of course to set that your employee work hours are from 10.30 to 19 and that should be it.
