I would like to change te font size on the forms to be consistent with the size on our website... I cannot find anywhere on customise to do that...is that correct?

Unfortunately, there is currently no such option with Amelia's built-in features. You can suggest that feature on the following link: https://features.wpamelia.com/
We carefully follow suggestions from our customers and the more vote the feature gets, the more priority we put on implementing that feature in one of the future updates.
That worked fine... for Appointment booking form v1 which you provided the font size change for, how can I reduce padding and increase container sizes with CSS?

Most fonts are too small (12px to 14px) to be consistent on our site they need to be 16px to 20px... so the v1 booking form for example...

The container size cannot be changed for the booking forms.
