Greetings. When I edit a record the hidden fields in Gravity Forms appear. Is there a way to hide the hidden fields in a Gravity form when editing them in the popup?
wpDataTables sees all the form fields in Gravity, so there's no way to pull the Appearance/Advanced settings from Gravity. Gravity hides them based on settings, but as they appear in the database, if these fields are selected when generating the table, they will also appear in the edit form.
A single table can be created from a single Gravity Form and there's no way of joining multiple forms into a single table.
If you have multiple fields in a single form, you can create a table from it and, once you enable Server-Side processing, you will be able to edit the entries. Please note that filtering and sorting may not work correctly for these tables and that, if you edit entries that contain a link or an image - you will lose that entry.
If you have follow-up questions regarding this add-on, please open a new ticket and we'll gladly assist you there.

Hello Ted.
Sorry for the late response.

I had the same problem and luckily was able to hide the field again via CSS.
#input_2_11, #field_2_11 {
display: none;
}
2 being the form id, 11 the field id
We're glad to hear that you were able to resolve this, Ulrike.

how to join multiple gravity form entries in to one data Table with edit delete view functions?
