If service #1 should have availability to be booked from 8:00 to 13:00, and service 2 + 3 can be booked from 8:00 to 17:00 (so when service 2 is booked at the 8:00-9:00 slot, service #1's 8:00 slot should beome unavailable), there is no way to set these accordingly.

Thank you for reaching out to us.
For that purpose, you need to set it the following way:
08:00 - 13:00 - Service 1, 2 and 3.
13:00 - 17:00 - Service 2 and 3.
