I am a bit confused about the user roles. I want to give my client the Amelia Manager role as giving them Administrator access for day-to-day business is a bad practice for security reasons.
However when assigning that user role, they ONLY see Amelia. I need them to be able to also edit custom post types I created as well as regular WordPress blog posts.
How is this supposed to work usually? Surely I can't be the only one that needs access rights other than ONLY Amelia. Do I need to resort to a 3rd party plugin and assign access rights manually?

This is exactly how the Amelia manager role works in Amelia. With the "User Role Editor" plugin, you can set specific permission for each role.
