I would like to know if Amelia can be used for a kayak rental business, paddle surfing, etc. I have been looking at the documentation and I have seen that everything is focused on services provided by employees.
If I have 10 kayaks, for example, what would be the way to configure Amelia to work with this? Perhaps setting up each kayak as if it were an employee? Is it possible to run a kayak or car or bicycle rental business with Amelia?

In general yes. Services can not function without an employee but you can hide the employee choice since you do not need it and you can set up that you can rent up to 10 kayaks in each hour for example. This is set in the service capacity option.
