I am wondering if there is a way using Amelia that I can automatically hide/disable certain services until the customer has undertaken a specific booking.
For example, in the case where you would only allow a introductory/beginner session before showing intermediate/advanced session.

I'm sorry to disappoint you, but unfortunately, something like this is not yet possible.
Amelia has no way of limiting what the customers can see based on these conditions.
The only way is to install a membership plugin that will hide/block the page where the booking form shows intermediate/advanced sessions until they become a member. So, the new users would need to go to the introductory/beginner session; once they book they will be assigned with the user role that grants them access to the other page.
