I would like to use custom css on a table to set the header background colour using a CSS Variable like var(--client-background-color)

Can you try this CSS selector?
table.wpDataTable th {background-color : blue
}
That is the general selector for the headers in our tables, but let us know if you require something more specific.
If you need it for one table, add it in the table's Customize/Custom CSS,
or if you need same style for all tables, add this in main plugin settings/Custom JS and CSS/Custom CSS.
