If i understood, the client needs to have a UTC+0 time show as the current time, if they click in a Date Time field / Date Picker during Editing?
This "current time" will be pulled from the device on which the browser is being used.
I just tested this behaviour on my computer.
For example, if the Time Zone in my Operating System on the device is set to UTC+0 , this is the time that loads in the Date Picker as the "current time" if i just click into today's date.
Then, if i change my Time Zone of the device to another one, this time gets passed to the Date Picker.
So, the solution for this use-case would be for the client to set UTC+0 as the Time Zone on their device when they need to Edit the table,
and when they finish editing, revert the Time Zone to their local time.
Let me know if that works as a solution? Thank you.

If you meant to ask do we have a workaround to somehow "lock the time zone" for the Date Picker in the Editing Modal regardless of the device Time Zone,
for that i am checking with our 2nd level Team to see if we have any solution available,
and i will let you know as soon as they respond.

If you have coding skills and wish to try to make a custom solution now,
Customer needs all displayed datetime fields in UTC +0. Currently dropdown select displays local date and time.

Please be advised that custom solutions with hooks are not included in our support.
You can also research resources such as Stack Overflow to see if any other user perhaps found a workaround.
( We do like to give examples for certain solutions, but for this use-case, we, unfortunately, don't have anything yet)
