Sorry, but i am not sure i fully understood what you mean.
Perhaps you mean, like a more "classic responsive design", such as making blocks of data beneath each other?
At the moment, this is the Responsive behaviour for our Simple Tables - you can check them our here.
to see if someone may be already suggested this feature. If you can't see it, feel free to add your suggestion there, and as more people vote, the feature will move higher on the priority list.
You can certainly follow our changeLog page if you'd like ( it is also available in the plugin dashboard), where we state any changes/new features/bug fixes during updates;
and our newsletter, so you're informed about new features, bug fixes, freebies, etc.

Other than that, you could make your own custom CSS Media Queries and apply custom CSS to our tables, but that would include custom work which is not provided by our support.
And i just wanted to point out that you can try wpDataTables before purchasing
on our sandbox Demo sites ( you can find links for the main plugin Demo,
as well as add-on Demos, in my signature),
and there is a 15-day money-back guarantee period,
so if you purchase the plugin, you can safely fully test it out, and if it doesn't fit your needs you can request and receive a refund in that period. ( same goes for all plugins and add-ons)
Salve prima di acquistare volevo gentilmente sapere se per le tabelle responsive le icone di "+" open row e "-" close row potevano essere sostituite.
Grazie.

They have a different Responsive design function, when compared to other table types Responsiveness with the + expansive symbol.
If you wish to see an additional option like that for other table types then Simple Tables,
you can make a future improvement suggestion and our developers will do their best to add it as soon as possible.
Please feel free to search on our suggestions page,
