1. I have only one service, which is the Water Rafting activity. - You can have as many as you need
2. No employee selection. - services can not work without employee, and if you have one service and one employee no employee choice will show, in any case you can hide this in customize section
3. a Minimum number of people per booking is 5 persons, and max is 30 persons. I guess this is a group booking? I do not need details or info about all persons. - You can achieve this with Amelia
4. My service is available every day. But I can set off days which I can select in a calendar maybe. - You can set special days and days off in employee modal easily
5. I have two daily trips, one in the morning, starting at 9 AM for 5 hours (maximum capacity/persons is 30), and one in the afternoon starting at 2.30 PM for 5 hours (maximum capacity/persons is 30). I guess I can set "inventory" for each trip to max 30 persons. - You can just set the capacity of service to 30 and that is it
6. I have pricing tier, 5-14 persons booking (Price A), 15 to 24 persons (Price B, slightly discounted), and so on. - Unfortunately, currently, this feature is not built-in in Amelia.
7. I need to use the WooCommerce payment gateway. - We have WooCommerce integration
