We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.

But my working hours are from like 8am to 8pm on Sundays and like 5:30-9pm weekdays. 9:45am and 2pm in the customer panel are the earliest times.

No. This issue occurs after I book an app myself in my current time zone. Even after setting the time zone to only eastern in amelia settings, it did not affect it.

Amelia inherits the time zone settings from WordPress, and I saw that your time zone is hard coded:
The time zone in the panels is adjusted per users' physical location, but it's then adjusted for the back-end depending on the WordPress time zone.
More info about this and the issues it causes can be found in this article, but in short - change the time zone and select the city you're in, or the city that's in the same time zone. After that purge the cache and test again. It should be working fine, but let me know.
One more thing - as mentioned in the article, if you hard-coded the time zone, and you have booked appointments, once you switch the time zone in WordPress to your city, it will adjust the times in Amelia's appointments to fit the time zone your city is currently in.
The only solution, in this case, is to manually modify the appointment times, but it's the only way to make sure your time zone is properly configured, and that the future appointments will be saved and displayed correctly both for you and your customers on the front-end.

It still is not resolved. I made a "test" booking and rescheduled in the customer panel and incorrect hours are still an option.

I updated to 6.2 today but the issue is still there
