For instance, when a client book a quad tour, he selects the slot he wants, and hit the "book my session" button. From there, I don't want him to receive a confirmation email. Instead, I would like the quad business to receive an email, saying that someone wants to book a tour with them. The quad business will confirm or decline the booking and only then, the final client will receive the confirmation (or declined) email. Can I do it with Amelia ? So when the pending session is on, do the quad business (not me) receive an automatic email ?

Yes, both the customer and employee that is being booked on that service (Amelia services can not function without employee) will get notifications of the pending booked appointments.
