You can not do double booking in Amelia. Amelia is designed to prevent this. So, you can either create a group appointment or you can create several employees that will work in same service at the same time and in that case customer can book the same slot for same service with several employees.
This is how Amelia works.

How to I make it that if someone books a full day event, that employee is still available?
