Not sure what I'm doing incorrectly. The Pie Graph numbers aren't matching what I've created in a spreadsheet pie graph. I've tried using the actual numbers for each category label and when that didn't work, I tried using numbers that equal 100 to test it and that didn't change anything.

I see what you mean, if the values in the source table are as you wrote, it does seem odd.
I tried to replicate this issue on my Test site and i am not able to.
For example, i placed values as you said , like this :
Law 5 Business & Entrepreneurship 32 Computer Science & Engineering 48 Economics & Humanities 6 Professional Studies & Certificates 9

And this is the Apex Pie chart i make from it :
Can i take a look at the back-end from your WP-Admin, so that i can double-check your table setup and the chart?
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
By the way, there are two tables #12 and #15 that I was using to test. #15 is the exact numbers we want to show as a percentage and #12 is the actual numbers (but when converted to percent, should match the numbers in #15, if that makes sense).
Let's ignore table 12 for simplicity. I went back to the chart (#1) and switched the source to table #15, the table with whole numbers that equal 100. Saved the table and on the front end it still has wonky numbers. Would you check my work and make sure I did it correctly and why this is happening? I checked the chart shortcode on the front end and it also is the correct chart. hm :/

Using the first pie graph as an example, here is what I have in the table:
