I then booked a third appointment from an incognito window using another e-mail address. Through the customer panel, I was then able to move that to then Jan 9, 9:30 slot as well, ending up with this:
The services are set to last 1 hour with an added 45 minutes of buffer time afterwards. So when attempting to reschedule, I wouldn't expect Amelia to show any time slots between 9:30 and 11:15 am on Jan 9th as available, much less to allow choosing them.
Is this behaviour intended? Am I missing something?

As far as we can see this option is working fine and there is no double booking. As for not showing the already booked time slots this option is built in Amelia. It is strange that this is happening to you.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.

We have since disabled all caching on this website and we hope it's no longer going to occur. If it does, we'll do what we can to provide the best and most accurate possible steps to reproduce.
I'm truly sorry, I honestly wish I had better news, but I'm still able to move appointments all the way across a tightly booked day (tomorrow, Jan 12th). The attached screencast shows the issue.
I don't know what else to tell you. I moved Bruce Willis to 12:30 tomorrow immediately after recording the video, and now Claudia is double-booked.
I just discovered something that might have to do with this issue. I manually triggered an event reminder. It's set to fire 24 hours before the event starts, and I clicked on the "Send Test Email" button to send a test e-mail using that template.
The e-mail I received said that the upcoming event was tomorrow at 10:34 am. But the time here is 11:34 am.
In WordPress' settings, the time zone is set to Berlin and WP recognizes local time correctly:
Amelia seems to think it's 10:35 (universal time) when in fact, it's 11:35 (local time).
That is strange but Amelia doesn't have any time zone settings, and it relies on WordPress' General settings. When you select the city you're in just like you did, in WordPress' General Settings, the system automatically calculates the Daylight Savings Time, and shifts the clock accordingly. I will also forward this to my colleagues.
Were you guys able to isolate the issue? Our launch date was supposed to be the 13th. We postponed it indefinitely because we can't go live with a broken booking system.
It'd be awesome if Claudia could launch her business sooner rather than later.
We just got the feedback from our colleagues and they have told us that they as well as I could not replicate the issue. Whatever we try we can not double book and every scenario that we have tried looks good and behave as it should and we can not replicate the issue everything is looking fine.
Please do, feel free to forward our responses. Whatever test scenario we try we can not replicate the issue and Amelia is designed to prevent double booking.

As far as we can see this option is working fine and there is no double booking. As for not showing the already booked time slots this option is built in Amelia. It is strange that this is happening to you.
