You can use this CSS, if you wish to simply change the color of all links in your table.

.wpdt-c a {
    color: red;
}

Add this to Customize/Custom CSS of the table settings.

Or if you wish to have this same color for all tables ,  add it to main plugin settings/Custom JS and CSS/Custom CSS.
