I'm afraid we don't understand exactly what you want to achieve. There is no possibility to book the maximum daily number of booking places. We can see that you have 8 services, and each of those services has the possibility in the edit services to adjust the capacity for that service.
So, if you have a service that lasts an hour and, for example, and the capacity for that service is 10 and the working hours of employees are 8 hours, you offer the possibility of booking 80 seats for that service per day.
We don't know exactly what you want to achieve, can you briefly explain with a short example and we will try to help you, but Amelia works in this way.
When you create a service you can decide what the capacity for that appointment is like this
You can set that capacity for this service is 1 to 28 and then 28 people will be able to book that appointment.
Also, in settings/appointment settings you need to set this opinion like this
Service working hours depends on emplyoee working hours. So if you set that this emplyoee work only from 10 to 11 on this service, the only time slot for booking that will appear on the front will be form 10 to 11.
If you set to work from 09 to 17 you will offer several time slots and each of them will be able to be booked by 28 people.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. And please tell for which service this happens and with which emplyoee?
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.

In our facility we have 28 seats. This means we can sell 28 appointments on the same Day AND Time.
When I try to add a 10 block of time for December 13, this date is blocked.
How do we allow 28 people to book the same time and day for every day of the year?

We can book 28 seats per hour.
In other words you and 27 of your friends can book 10:00-11:00 on any given day.
Or, 7 different people can book 4 seats from 10:00-11:00 on any given day.
This needs to be available to our clients during ALL of our open hours.
I really hope this explanation is totally clear.
Thank you
