I did some initial attempts, and also searched through old cases, i can't seem to find any examples to achieve using a symbol such as that as a prefix in our tables.
I also tried adding custom HTML and CSS in the prefix section, it does not work;
it seems that only works when used directly in String cell content.
We will escalate this question with our 2nd level Team, and they will confirm if symbols like that can currently be used as prefix in our plugin.
We will do our best to confirm this as quick as possible and will report back as soon as they advise.

- A this time, the only workaround might be if you have a symbol in WP Media Library,
then to get the symbol's URL and make an SQL table where you would create a custom column using CONCAT to add URL that leads to the symbol,
and to place it in this way in front of the cells of the CONCAT custom-created column.

I'm trying to add a symbol (like a checkmark or hands) as a prefix to cell content.
