If I turn off "show service on site", is it possible to create a private link that will link to that specific service, but otherwise the service isn't viewable on the general scheduling page?
I can see a workaround to this by creating a second employee (I'm the only employee) and list only that service with employee2 and the other services with employee1. Or is there a better/cleaner way?

Unfortunately, currently, this feature is not built-in in Amelia. If you hide the service on the front in that case there is no link that you can send to your customers.
You can try with your solution we can not know what exactly you have in mind. But this sound like it will suit your needs.
