With the new Amelia 5.4, you can configure multiple durations for the same service. So, if the default duration is 1 hour, you can add 2 hours, 3 hours, 4 hours, etc. And you can configure prices for those different duration intervals.
There's no way you can create a start time and an end time, but with the custom duration feature, you should be able to achieve the desired effect.
Rearranging the step order is not possible. Mostly because of the plugin's logic. First you select the service/employee/location, after which the plugin checks the availability; if the service can be attended by multiple people, if there are any extras, and so on. After that, it filters available time slots, and when those are selected, the customer details come into place.
You can hide some fields using Amelia/Customize section, so feel free to play around with that.
The employee field is mandatory for services and there's no way that dependency can be switched off. Events, on the other hand, don't require an employee, but I don't know if Events will suit your needs.
