1°) is possible for an employe to book on the schedule of unavailability off (not a full day but a half day or a few hours for example)

When we book an appointment from a service, we can only choose the durations that are set for the service,

and according to the employee work hours,

this creates the available time slots.

But, can you please elaborate more about what you mean by this and we will advise if it is possible - I am sorry, but we don't fully understand.

If you have any examples to show us,    possibly with screenshots or a video.

2°) on the planning  window  can we see only a part of the days not the entire day  (not from 0 to 24 but from 9 to 19)

Yes.  When logged as Admin, if you enable this setting in Role settings/Admin/Allow Admin to book any time,

then you will see 24 hours, it will ignore the work hours.

But if we disable this, then you will see only regular work hours on the Calendar.

Can we use a different color for each employe or each service?

At this time, this is not possible to achieve with any built-in features.

At this time, maybe it is possible only with custom CSS - but customizing Amelia is not included in our support.
