We can't open slots on 7 October. I have tried opening a slot by opening a special day in our employee "Cosy Suite" . All other days work, but for some reason, it doesn't work on this particular day.
We have one service "Weekdays - £25" and two employees. We have set it up this way so that we can have two bookings for the same service at the same time. There are no other special days open then, and no days off.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
Our Amelia calendar is synced with our outlook calendar. This seems to be what is preventing us from booking new appointments that day. I made the outlook appointments free rather than busy and that solved it.
Is there a way we can sync data from Amelia -> Outlook but not the other way around? So when we get a booking in AMelia it shows in Outlook, but the appointment in outlook does not block out any further bookings if there is already something in the calendar.
Unfortunately, that is how the integration with Outlook works as all the busy slots will be blocked for booking in Amelia if the "Remove Outlook Calendar Busy Slots" option is enabled.

You could simply disable that option on the Amelia/Settings/Integrations/Outlook Calendar page.
