However, I have filled in and saved the translation for the custom fields.

Amelia works in the following way. What language you have set in WordPress on that language Amelia will be automatically translated. If you want Amelia to be displayed in English, you need to set WordPress to be in English as well.
Or you can create the entire site to be multilingual and depending on the language that your customers choose, Amelia will be translated it because Amelia follows the locale of the pages.

On the screenshots "settings" I can change the name of the labels and they are well taken into account in the preview, it should also be the case on the final page ? But it does not work CF capture.
We are not familiar with the Weglot plugin and cannot guarantee what the results will be with that plugin. As we mentioned, Amelia inherits the language from wordpress, in which language is wordpress, in that language will Amelia be. If the site is multilingual, Amelia will monitor the locale of the pages.
For that, it is not enough to translate only the page, you need to do it with a multilingual plugin. But Amelia is translated about 90% to 95% and if some stings are not translated you can translate them with Poedit.
4. After that open the program and open the file from the extracted folder on your computer ameliabooking/languages/fr_FR/wpamelia-fr_FR.po.
5. Translate all the strings that are not translated
6. Save the translation.
7. Go to ameliabooking/languages/fr_FR/ folder and copy these two files called wpamelia-fr_FR.po and wpamelia-fr_FR.mo back to your website in the location ../wp-content/plugins/ameliabooking/languages/fr_FR/.

For example the term "add 30 min extra" does not exist in English or in French in the file "wpamelia-en_FR.po" and I have no way to create it, so I'm stuck...
It's a real headache and I'm stuck on it since yesterday... I would really like to find a solution quickly.
We do not understand where the issue is. You created that extra and you called it like that. You can't translate that string because it's not a string from Amelia, it's something that you have created, if you want your extras to be called something else, just call it something else and that's it.

We have checked in the console and the locale of your pages are not good. When we select the English language on your site on this page

Words can be changed using POEDIT very easily.
If you want to use POEDIT then this is an instruction:
1. Download the Amelia plugin from CodeCanyon and save the .zip file on your computer.
2. Unzip the downloaded .zip file.
3. You need to download and install POEDIT.
4. After that open the program and open the file from the extracted folder on your computer ameliabooking/languages/fr_FR/wpamelia-fr_FR.po.
5. Translate all the strings that are not translated
6. Save the translation.
7. Go to ameliabooking/languages/fr_FR/ folder and copy these two files called wpamelia-fr_FR.po and wpamelia-fr_FR.mo back to your website in the location ../wp-content/plugins/ameliabooking/languages/fr_FR/.
This is an example of the French language.

This was an example... other terms on the plugin remain in French and I can't add them on Poedit.
Here for this example, I can translate it on Amelia (cf capture) but the translation does not apply when my page is in English ....
