I don't want to charge customers at the time of booking and I want it to display no cost at all as the price is determined after the service. If I set the price to 0, is £0 cost displayed on the front end or can we hide the price altogether?
We have not yet set up the booking system or website, we are asking you to advise before we implement Amelia on our client's website. There is no URL to look at.

We don't want to show £0 as it is misleading.

For the purpose of hiding the price of the service on the front-end, you could use the following CSS:
.am-adv-select__popper .am-adv-select__item-price{display: none !important;
}
