Also, if you want to use services, you could add an employee for this use only. You could assign different prices for services (discounted prices) for that employee and then use "Special days" to configure when this employee will work. So basically set the days of the holiday for that employee. The other employees, that work on the regular days, can be off on holiday days so that only the employee with discounted prices is available.
