This is indeed a highly important issue as there are already waves of compensation claims rolling through several European states.
Without being able to remove any Google Font from the WordPress system including all plug ins, it is not possible to keep WP Data Tables active. And for some businesses this is shutting down the very core.
You can use another server by choosing Custom Font in Amelia/Customize section. You don't have to use Google Fonts.
You can also download the font pack and load them on your server, so the fonts load from your server directly. If you set the Custom Fonts, they will not be pulled from Google.

You should add a URL to the .ttf font. For testing, I downloaded one of the fonts from here, added it to ../wp-content/uploads/fonts/ folder, and pasted the URL to the font, like this:

We cannot replicate this behavior. We've loaded the Poppins font family in ../wp-content/uploads/fonts/ folder that we created on a live server:

Maria, the same applies to Booking Forms 1.0. Are you guys sure these fonts are coming from Amelia? If you are, can you please record your screen, showing us how you added the font to your website's server, and how you loaded them into Amelia?
I see you set .woff2 format. You should add a URL to the .ttf font.
I'll attach both Roboto and Poppins libraries (downloaded directly from Google Fonts), so you should be able to extract one of the fonts included in these zip files, upload them to your wp-content folder (it's advisable to create a separate folder for fonts), and then use the URL to .ttf in Amelia.
But the best way is to check over your Browser (Development/Entwickler-Tools) if something Loads from: fonts.gstatic or any other Google Sources before you have agrreed the Coockie Banner.
You're doing something wrong. I can't say what without logging into your site, but something's not being done properly.
I used the sicher3 site, and checked the live server I used to send you the detailed instructions in one of my previous responses, and this is what I got:

Are you sure you added .ttf fonts to Customize 1.0? Since, if you only added it to Customize 2.0 the font won't be applied to old forms (Amelia Catalog, Amelia Events, Customer, and Employee Panels).
Since the ticket you have with Marko is private, please provide us with wp-admin access credentials there, for the site you're having issues with, and we'll check it out.
im using the Amelia Ticket on Multiple Customer Sites. Actually there are 2 productive Sites for my Customers. I will provide in my private Ticket the Credentials so you can Log-IN and the take a look from iniside of WP-Panel.
I did not use the 2.0 Form. Only 1.0 is used on all Sites.
On Productive Sites i have blocked the Amelia CSS temporary to be SAFE over the Real Coockie Banner Plugin Content Blocker. Also i have the Google Fonts locally loaded (for the Website) with the OMGF Plugin.
