Is it possible for the owner and only employee of the site to create "personnal appointments" (if for example she has a business meeting with a supplier) which would block the chosen time of the appointment ?
I'm afraid that we didn't quite get what you want to achieve exactly? Can you explain to us in a little more detail, and send us a couple of screenshots?
The employee can create appointments on the Employee panel or the admin panel, but if you are referring to appointments outside of Amelia, you could create busy events on the Google/Outlook Calendar.
That is exactly right, but for that purpose, you need to enable the "Remove Google Calendar Busy Slots" option on the Amelia/Settings/Integrations/Google (Outlook) Calendar page.

I've set a slot on the 10th of October from 3 to 4 pm (picture 1) but it is still possible for an user to make an appointment on that time and date (picture 2)...
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.
You can write credentials here just check PRIVATE Reply so nobody can see them except us.
