The available time slots for booking, are directly linked to the work hours of the assigned employee/provider of the service.
So, for example, if you have one employee that provides multiple services - and each service should have different days and times available;
you can set different capacities per service, by making multiple work blocks for employee work hours, for example like this, from our Demo, we have employees, who provide different times for different services :
Alternatively, you can always create new employees, that have different work hours, as well.

I am sorry - but i don't understand the concept for the Regular consultation.
You said it is available for all days - but you want to be able to set it as "unavailable"; if you could please try to explain this?
Perhaps you mean that only you should be able to book this from back-end ; but need it hidden from customers on the front-end, or something like that?
If you need to hide a service from front-end, so it's only bookable from back;
in Service settings ( edit Service tab), you can set : Show service on site, as unchecked :

Could i take a look at the back-end settings, to see how you set the Special days, and Work Hours in general?
I think that will be the best, so that i can get a clearer picture.
Please provide me a temporary WP-admin (administrator) user for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course, we do not provide login data to third parties.

I tested it out from the back-end and front-end and the times set in the "Special days" reflect properly on the front end.

Special days are working but other days is available on the user side. It has to be unavailable before Aug 29, For example. PLEASE ANSWER ME SOON. My entire business need this appointments :)
Special Days overwrite the days on which they appear, but the Work Hours of your employee still apply to all days until the Special Day comes.
So, in your case, these work hours will apply until August 29th:
Then, the Special Day for August 29th will be applied, and they will last until August 31st. Then, again, the regular work hours will apply until September 2nd, when the special day is applied, and so on:
If you want the employee to be unavailable at all times except when Special Days are, you need to delete your employee's Work Hours by clicking on the "-" symbol next to Work Hours in each day in the "Work Hours" tab of your employee.
Also, you could create Days Off, but please note that Special Days cannot overwrite them. So, you would need to create days off from TODAY until August 28th (being that the last day), then a Day Off on September 1st, then from September 3rd until September 5th, and so on.
It all depends on how you want to approach the availability of your services on the front-end.
For setting "pauses" between two time slots, you have two options :
1. You can set buffer times, for example you can set 10 minute "after" , this way the employee will have time between one time slot and the next one.
Buffer time(before and after), that you’ve set when you configured services, is the time that doesn’t affect appointments duration but reduces the number of free time slots in the schedule. If, for example, you have configured a 30 minutes buffer time before for the service that lasts 4 hours, your customer will see 4 hour time slots during their booking, but they won’t see the 30 minutes buffer in the time slot. The next time someone tries to book the same service for the same employee, the next suggested slot will appear 30 minutes after the first appointment finishes.

Or you can manually set breaks in the employee work hours.

Hi there, I made it work with creating a new employee for urgent service. And it’s ok.
Now I want to set a 10 minute break between time slots, how I can do that? For example: 9-10 and 10:10-11:10 then 11:20-12:20
