In general, it is, you can add a consent checkbox to the booking forms and all the data is stored at your server, nothing is stored with us. The only thing that you would need to add manually, for now, is to remove user's data if they choose the “forget me” option. We plan to automate this too.

It is not really the answer that I was expecting for, as either it is fully compliant or not. It should not exist middle ways, or ' in general is'.
Anyway, please so explain me exactly the paths for performing the actions that you mentioned below.
Also, in the custom fields I need to add a link in the text I have added. But it does not let me add anything else then a plain text. Please see screenshot below. In the text below I would like to add also a reference to the privacy policy and have the link for it, but I cannot. HOw can I do that?
We do not store this data and we do not have access to it and everything is stored with you on your servers that is very important to mention and when you add the terms of use or consent check box you should be covered. You can create a consent box with the help of our custom fields option. You can read more about it on the following link https://wpamelia.com/custom-fields/.
To add a link to Terms & Conditions, you can use "Checkbox" or "Radio" custom fields. In the custom field you need to add an anchor tag like this:
So this text appears as a hyperlink that opens a new tab (target="_blank") and takes the customers to your Terms & Conditions without them leaving the booking form. So the custom field on the back-end would look like this:
As you can see, we made this radio button a mandatory field, so no one can book an appointment without checking the "I agree" button.
