Yes.
For the new Form, go to Amelia Customize > Select step for "Your information"/ Options/
and there find the Email field, and uncheck its visibility

Customize / Find the Form type you need/
for StepByStep, it is Step 4 / there you can see a little pen symbol, to edit fields;
edit Email fields/ set as Not Displayed :

At this time, it is not possible to have any employee without an email and a name.
We only have a workaround to use the same email for multiple employees -
but to completely remove the email for employees, maybe it will be possible in the future - but i am honestly not sure if, and when it might be added as an option.

will be different while saving and you will be able to save all employees but all emails will go to ' [email protected]' address.
Here is an example from my "fake employees", this one i name "Nick Employee", and his duplicate i just added the name "duplicate", but they can actually have exactly the same name ( if needed).
It would, if the client used gmail or outlook mails. But they are using domain specific mails, i.e [email protected]. So this won't work....BUT, since the mails that are added to employees doesn't get authenticated, I am literally adding bookings1@ and bookings2@ and then in the settings by Bookings just said that all mails must also go to [email protected] tested it and it works 100%. So the other mails added by the employees just never gets sent because there is no where to send them to but the main email is getting the booking mails...not ideal, but it works for now.

By point nr 2 i meant in the back end where I add an employee, not on the booking form. Is it possible to make the required fields there not required?

Apologies for all the waiting time
Here is a workaround to have the same email for multiple employees.
Basically, if you use Google or Outlook for emails ,you can put the same email ,
just place " +number" before @ symbol, and you will be able to save employees,
but all emails will go to the same email address.
For example: ' [email protected]', ' [email protected]', ' [email protected] ' etc,
will be different while saving and you will be able to save all employees but all emails will go to ' [email protected]' address.

I just add the +1 before the @ symbol.

You are correct, that was only for gmail or Outlook workaround.
But i am happy to see that you found this solution - at least until our developers make better options in the near future.
