My client has asked me to hide the employe and the aware time of their appointments at his packages and single services. I cannot find how to do it at Amelia.

Hello again, so we changed to the new 2.0 step by step booking forms, but I want the shortcode to display just a package pre selected, because we created a landing page for each package.
And the second question is with regards to hiding some information at the forms, My client doesn't want people to select the employee at the step of selecting their packages. they want it to be hidden.

Unfortunately, there is currently no option where you can pre-select packages. Currently, we only have a shortcode where all packages can be displayed.
I'll kindly ask you to add it as a feature suggestion on this page.
Features are pushed up on our "to-do" list when there are a lot of customers requesting those features, so having your vote as a customer can be beneficial to this feature being developed sooner.
Regarding employee selection, you have an option in Amelia's customize section to disable the employee field like this

Firstly, my apologies for all the waiting time.

At this time, for the StepByStep forms ( both old and new) , we don't have a way to present only a single Package through a shortcode, but our developers will work on making a solution for that in the future - i can't say an ETA, though.
Please feel free to search through our feature suggestion page,
to see if someone may be already suggested this feature. If you can't see it, feel free to add your suggestion there, and as more people vote, the feature will move higher on the priority list.
You can certainly follow our changeLog page if you'd like, where we state any changes/new features/bug fixes during updates;
and our newsletter, so you're informed about new features, bug fixes, freebies, etc.

Currently, to present only a single Package through shortcode, it is only possible with our Catalog Form Type;
like this :
[ameliacatalog show=packages package=8]

The best i can come up with, if you have to use the New Step form,
is to either present only one service ( that is part of the Package);
or to present a shortcode with only a specific Category of Services;
then in the New Step Form, if a customer picks one of the services offered in the Package;
they will get asked, if they want to pick a Package that contains that service;
Then they can decide to pick a Package, or to skip it and continue with regular service only;

For this, we can use
or to present only one Category;
[ameliastepbooking category=1] if you want to show only the services from a category with ID 1.

You can hide the employee selection from the Form, if you go to Amelia Customize / Steps/Services/Options;
and there find the employee field, set as "don't display":
