The new step by step booking system does not show on my clients website. I have to go into the page builder and update the page, then it shows, but disappears again after a while. Most of the time it's not showing.
By your description of the issue, it sounds it is a very intermittent issue.
Right now i am able to see the booking from my end if i visit the page
When we see intermittent issues, most of the time it is related to cache issues.
Can you try to purge all cache of the server and the site, refresh everything, and let me know if it helps?
It is good to periodically purge all cache of a site in order to avoid these issues.

But i am not 100% sure, for example, if it shows for logged in users, but sometimes not for non-logged in users;
it might also be something with the security of the site.
In that case, it might be something from the hosting side, blocking admin-ajax calls - but if you could somehow catch the issue when it happens, and if you can record a video, or take a screenshot from the browser developer console, showing the "Network" tab, and console tab, that would be great - we could help you isolate the issue further.

I just wanted to take a look at the WP-Admin of this site - i found credentials for other sites; but seems you didn't grant us access for the https://artmos.co.za yet?

My hosting provider was able to locate the problem with the NitroPack plugin. I'll be using an alternative caching plugin from now on. The problem seems to be fixed.

I've just been advised, the 2nd level Team investigated this.
Basically, the old form is based on Vue 2 framework; but the new Form is based on Vue 3 Framework.
Most probable cause for this is that you probably have some security measures on the site, that are related only to Vue 3 Framework.
