is there an option on the Table Edit to use a Select box option for the Values? or a check box. i want to set a predefined list of choices when they edit a particular column

Absolutely, you can set various Editor Input Types, amongst them are a Check Box, SelectBox, and MultiSelectbox.
also for the predefined section.. what if i want to put values like a drop-down the user can choose from will values like "Georgia, Texas, Florida" do they can choose one?

Another New Issue is with Date format
Issue number 3.. I noticed that the date format in the database is different from the tables date format on wpdatatable frontend - this can confuse my users.
in the US the standard date format is MM/DD/YY - but in other countries it is DD/MM/YY.. so how do we translate "12/08/22' see attached
Do you maybe have the old SQL statement somewhere, i could take a look; maybe we can figure out what happened before to cause the placeholders to "disappear"?

Yes, it is quite odd, i [personally didn't see something like that before - but i will ask senior colleagues if they have experience with it.
Seeing how the SQL statement was before could certainly help, and if you can also show us how the Query looks now.

You can predefine values for filter manually, if you wish-
from column settings / Data tab > There change possible values for column to "Define values list";
and manually define the values you need to appear in the dropdown, for example like this :

1. Regarding the dropdown issue, please try to disable the ' Include full bootstrap front-end ',
in the main plugin settings. Let me know if that solved it?
2.
Regarding the date formats, you will have to choose one;
we don't have a way to make a variable date format - if this is what you meant?
- You have to make sure that the date format coming from the data source , is the same as your plugin setting.
You will find this in plugin main settings :

yes that seemed to solved it the issue but now For some reason, i no longer see placeholders on my table options. was this changed?
Interestingly i Just Changed the sql statement and added a variable and saved it now i can see the place holder. this is strange
