how can I supply a screen shot of an email going to a customer when admin deletes an appt?

If an approved appointment is deleted, the rejection email is sent to the customer, since the approved appointment was rejected. What other notification would you like them to receive?

we don’t want them to receive any email or their appt is deleted as we use the rejected email for customers who do not show up to their appts

If you don't want the users to receive any emails, you can disable the "Notify the customer(s) by default" in Settings/Notifications.
Otherwise, if you want to disable sending out the rejected emails only, you can simply disable this notification from Amelia/Notifications.
