As all other fields can be translated using customize V2, I see no reason to install an additional plugin for translation and this has to be considered as a bug by Amelia developers.
Please have it fixed as soon as possible. Thanks in advance
As mentioned a few times already, the Booking Form V2 is still in the Beta phase, so it's not expected to be bug-free or a fully completed feature. We will, of course, make sure our developers include this in one of our upcoming updates. They are already planning a few improvements for V2, but we can't guarantee everyone's wish is going to be fulfilled, and that they will all be fulfilled at the same time.

Thank you for reaching out to us.
Words can be changed using POEDIT or Loco Translate for example very easily. I suggest you install Loco Translate and then translate these strings.
If you want to use POEDIT then this is an instruction:
1. Download the Amelia plugin from CodeCanyon and save the .zip file on your computer.
2. Unzip the downloaded .zip file.
3. You need to download and install POEDIT.
4. After that open the program and open the file from the extracted folder on your computer ameliabooking/languages/fr_FR/wpamelia-fr_FR.po.
5. Translate all the strings that are not translated
