Similar to what I had suggested to another poster... why not make use of email routing rules? Create a master email address to receive employee notifications, then re-route the email to one or more recipients based on rules. This kind of thing is easy to do in Gmail settings or in Outlook mail, or in cPanel mail routing on the server.
You may have no rules at all and just simply route a copy of the email to both the employee and the boss.
Or if you include %employee_full_name% in the subject line of your employee notification email, then you can send all your various appointment types to the same master email address and route them to the appropriate employee based on the name of the employee contained in the subject line.

there is a hack:
if you add a '+' in the email address, the same e-mail it ends up in the same inbox:
For example:
[email protected]
[email protected]
both will e-mails will end up in the [email protected]
this works in gmail and if your email provider allows, also with other email provider
