I have found many untranslatable strings (not in .po files) in the current version of Amelia. Some of them are:

Displays the TOTAL NUMBER of people, not the "people that are coming with this customer".
Sometimes it is a bit tricky to translate properly because there is no context in the code, so you don't know where the strings are used for.
Yes, you are right, some strings are missing at the moment, those that are added to our new Customize page.
As for the "Service", "Package", "Employee" and "Location," these strings are not new and should already be in the .po file. Maybe we just miss connecting those added on the Customize page, I will forward this to our developers. Just so you know, these strings can be edited on the Customize page, take a look at the image below:
So, basically, each step and each label on the new booking form, including the error messages, confirmation messages, placeholders in the dropdowns, etc. can be edited in the Labels section and also translated to multiple languages.

I didn`t find the option to translate "Get in Touch" that is at the bottom left corner of the booking form.

That's not yet included in the new Customize section.
